Bucatini with Olive-Caper Sauce

You will need:

  • Kosher salt
  • 1 small clove of garlic
  • Pinch of red pepper flakes
  • 1 pound of tomatoes, all diced
  • 3 tablespoons of chopped fresh basil
  • 2 tablespoons of extra-virgin olive oil
  • 12 ounces of spaghetti or bucatini pasta
  • 2 tablespoons of capers, all drained and rinsed
  • 8 ounces of finely chopped fresh mozzarella cheese
  • 2/3 cup of pitted and chopped nicoise or kalamata olives
  • 3 tablespoons of unsalted butter at room temperature, cut into pieces

How to prepare:

Boil a large pot filled with salted water and cook the pasta in it in the standard procedure. Drain the pasta after reserving half cup of cooking water. Put the garlic, red pepper flakes and a tablespoon of capers on the cutting board and mash them using the flat part of a chef’s knife, thus creating a paste. Now transfer the paste to a bowl and add tomatoes, olives, one tablespoon of capers, olive oil and butter. Then stir in the cheese and basil. Combine the pasta with tomato mixture and gently toss it until the butter gets melted. If you feel, you can add the reserved cooking water as well. Finally use salt for seasoning.

Red Hawk Potato Gratin

You will need:

  • 1 cup of cream
  • 1 cup of sliced onions
  • 5 cloves of sliced garlic
  • 1 tablespoon of olive oil
  • 2 tablespoons of softened unsalted butter
  • 24-ounces of Red Hawk triple creme cheese
  • 2 pounds of Yukon Gold potatoes, all sliced to form 1/8-inch thick pieces, unpeeled
  • 2 cups of grated Parmesan (put aside half cup of cheese to use later as topping for the gratin)

How to prepare:

Preheat oven to 350° F and use softened butter to coat a 9/13-inch baking dish. In a large skillet, sauté garlic and onions for about 5 minutes in medium heated olive oil. Now pour the cream in and cook it for about a minute. Put some onion-cream mixture at the bottom of buttered baking dish and also add some cheese at the bottom. Put the potatoes in, overlapping them with some of the cream and cheese. Add pepper and salt to taste. Pour in some more onion-cream mixture and sprinkle some grated Parmesan in it. Add 6 ounces of Red Hawk cheese for topping. Repeat this as long as all potatoes and onion-cream have been used up. Sprinkle the gratin with reserved Parmesan cheese. Use aluminum foil to cover the gratin and bake it for an hour. Remove foil and bake for additional 30-45 minutes, as long as the cheese turns golden brown.
