Baked Tortilla Chips

You will need

  • 1 teaspoon of salt
  • 3 tablespoons of lime juice
  • 1 teaspoon of chili powder
  • 1 teaspoon of ground cumin
  • 1 tablespoon of vegetable oil
  • 1 (12 ounce) of package corn tortillas

How to prepare

Preheat the oven to about 175° C (350° F). Cut each of the tortilla into eight chip-sized wedges and then arrange them on the cookie sheet in one layer. Combine the lime juice and the oil in a mister. Mix them well and put them on each tortilla wedge as long as they become slightly moist. Combine chili powder, salt and cumin in a bowl and then sprinkle the mix on the chips. Now bake the whole thing for nearly 7 minutes; rotate the pan, baking the chips for additional 8 minutes as long as they turn crisp but not overtly brown. Serve with garnishes, salsas or guacamole.

Vietnamese Fresh Spring Rolls

You will need

  • 1/4 cup of water
  • 1 clove garlic, minced
  • 4 teaspoons of fish sauce
  • 2 ounces of rice vermicelli
  • 2 leaves of lettuce, chopped
  • 2 tablespoons of white sugar
  • 3 tablespoons of hoisin sauce
  • 1/2 teaspoon of garlic chili sauce
  • 2 tablespoons of fresh lime juice
  • 1 teaspoon of finely chopped peanuts
  • 3 tablespoons of chopped fresh cilantro
  • 3 tablespoons of sliced fresh mint leaves
  • 1 1/3 tablespoons of diced fresh Thai basil
  • 8 rice wrappers each of 8.5 inch diameter
  • 8 large cooked shrimps – all peeled, deveined and sliced in half

How to prepare

Boil some water in a medium-sized saucepan and put rice vermicelli to boil in it for about 3-5 minutes. Drain the vermicelli from the water. Now in a big bowl of warm water dip a wrapper into hot water for a second to soften. Spread the wrapper flat and place two shrimp halves, some vermicelli, mint, basil, cilantro and lettuce in a thin row across its center, leaving about two inches uncovered on both sides. Fold the uncovered sides inward and then roll the wrapper tightly starting at the end with lettuce. Repeat the procedure with remaining ingredients. Mix the lime juice, fish sauce, water, garlic, chili sauce and sugar in a bowl. Take another small bowl and mix the peanuts and hoisin sauce. Serve the spring rolls with hoisin sauce and fish sauce mixtures.
