But when you are too tired to eat something, how can you pull yourself to the kitchen to prepare dinner for your family. But as a responsible mom and wife, you know placing order cannot be done always. For those difficult days, here are recipes for some easy meals for dinner.
Recipe 1- Easy Meals for Dinner- Sweet Peas and Mushroom Risotto
Take 4 cups of low sodium vegetable or chicken broth and heat it at low flame. Melt a tablespoon of butter in a large skillet and sauté chopped onion for two minutes. Add one teaspoon of chopped garlic followed by a cup of uncooked Arborio rice. Cook for a minute, stirring occasionally. Pour in ½ cup of dry white wine and cook till liquid evaporates. Add ½ cup of warm broth, keep stirring and cook for 2 minutes. Keep adding the broth ½ cup at a time and stirring constantly. Add broth only when previous portion is completely absorbed. Take another skillet and heat a tablespoon of olive oil. Sauté mushroom for 5 minutes and add ½ teaspoon chopped garlic and thyme. Cook for a minute and keep aside. Add this mushroom to the rice mixture along with another teaspoon thyme, 3.4 cup of frozen peas, ground pepper and ¼ cup grated Parmigiano-Reggiano cheese and cook for three minutes. Add 1 ½ teaspoon of cheese at the top of every bowl.
Recipe 2- Easy Meals for Dinner- Twice Baked Stuffed Potatoes
Nothing can go wrong when your main ingredient of your dinner is potatoes, especially two favorite versions- mashed and baked. To prepare this, take 2 russet potatoes, scrub them and poke with a fork making sure they go well into the flesh. Place them on a baking dish and bake for an hour. Remove from oven and let it cool. Meanwhile, prepare the stuffing. Process the kale leaves (cleaning, washing and drying, discarding the stems) and boil in a pot for 2 minutes. When done run into cold water so that they do not get excessively softened. Slice the potatoes vertically and scoop out the flesh but leave ¼ inch intact. The scooped portion has to be blended along with broccoli, ½ cup of milk and kale leaves and prepare a smooth puree. Season with salt and pepper. With the help of spoon, fill up the cavities made in the potatoes. Top it with grated cheddar cheese and bake for another 10 minutes. Broil for another three minutes on high setting. Remove and serve immediately.
