Grilled Cheese and Watercress

You will need:

  • 4 tablespoons of butter, softened
  • 1 cup of watercress leaves, chopped or shredded
  • 8 sliced pieces of marble bread or pumpernickel bread
  • 2 tablespoons dill pickle relish or sweet red pepper relish
  • Half pound cheese of your choice: Muenster, Leyden or Havarti with dill, thinly sliced

How to prepare:

Preheat a large skillet or griddle over medium-low heat. Prepare four sandwiches, filling them with sliced cheese, red pepper relish and chopped greens. Then butter the outsides of sandwiches with softened butter and then cook them in a preheated pan as long as they all turn golden and the cheese have melted.

Goat Cheese Ravioli with Creamy Walnut Sauce

You will need:

For filling

  • Water
  • Three large pasta sheets
  • 2 teaspoons of minced garlic
  • 1 cup of crumbled goat cheese
  • 1 teaspoon of minced lemon peel
  • 1/2 cup of minced fresh basil leaves
  • 1 tablespoon of extra virgin olive oil
  • 1/2 cup of finely chopped toasted walnuts

For sauce

  • 1/2 teaspoon of salt
  • 4 tablespoons of butter
  • 1/2 cup of dry white wine
  • 2 cups of whipping cream
  • 1/2 cup of chopped walnuts
  • 1/2 teaspoon of minced garlic
  • 1/2 cup of finely chopped shallots
  • 1/4 cup of chopped fresh basil leaves
  • 1/4 cup of freshly grated Parmesan or Asiago
  • 1/2 teaspoon of freshly grounded black pepper

Goat Cheese Ravioli with sauce

How to prepare:

Combine goat cheese, basil, garlic, lemon peel, walnuts and oil in a bowl and mix well. Prepare the pasta sheet by putting it into a work surface and adding a teaspoon of filling two inches apart. Brush the dough lightly with water and fold it gently to squeeze out any air. Trim the edges with a pastry wheel and cut between mounds of filing to separate the ravioli. The ravioli can be made 8 hours in advance and chilled. Melt two tablespoons of butter and add walnuts to it. Cook the walnuts for about 3 minutes until they get brown and fragrant. Add butter, garlic and shallots and sauté them for a minute. Put cream and wine and bring it to boiling. Cook it as long as the whole thing gets thickened by about 50% in volume. Stir in basil, pepper and salt. After cooking the ravioli as long as they are tender, transfer them to the pan with sauce and combine them evenly. Serve by sprinkling grated cheese on them.
