Chicken Parmesan

You will need:

  • 3 eggs
  • Vegetable oil
  • 1/2 cup of whole milk
  • 4 cups of cooked pasta
  • 1 cup of grated Parmesan
  • 1 cup of panko breadcrumbs
  • 1 1/2 cups of prepared red sauce
  • 1 tablespoon of minced fresh parsley
  • 1 tablespoon of blended pepper and salt
  • 1 cup of all-purpose flour that is seasoned with pepper and salt
  • A whole chicken (i.e. 3 1/2 pounds on an average) or four pieces of 5 to 6 ounce skinless chicken breasts

How to prepare:

Slice chicken breasts into smaller pieces and remove their skin. Next, sprinkle them with pepper and salt. Whisk together the eggs and milk in a bowl and create an even mixture. Now add the parsley and breadcrumbs and keep it separate for breading. After that, preheat some oil to 350° F and preheat oven to 400° F. Dip each piece of chicken with seasoned flour, the egg wash and the breadcrumbs and then place all of the chicken pieces in preheated oil and cook them for 2 minutes. Do the same after flipping the chicken pieces to cook the other part; continue to do so until the pieces turn golden brown. Get rid of any excess oil with paper towels once cooking is over. After frying, pour a tablespoon of red sauce and some cheese on the chicken. Then bake it for 6-7 minutes until the cheese melts. Avoid over saucing, as this can get the chicken all soggy. Now add the pasta on the remaining sauce and stir it evenly. After the pasta is done, pour the baked chicken and top it with the rest of the cheese.

You will need:

  • Crackers, for serving
  • Two 11-ounce packages of fresh goat cheese
  • Six tablespoons of fresh dill and more if required

How to prepare:

Put all the packets of fresh goat cheese into the refrigerator to get them slightly hardened. Keep them in there for about 15 minutes. Now finely chop the fresh dill and spread them evenly on a cutting board. Keep them like that for few minutes, allowing them to dry. Take the goat cheese out from the refrigerator and remove them from their packaging. After that, roll it over gently over the chopped pieces of fresh dill thus covering it completely. It should develop a mossy appearance. Wrap this roll in a plastic and chill it until it is time to serve. Finally combine them with crackers and serve.
