Gluten free Breakfast Recipe – Orange Polentina

You will need

  • 2 cups of water
  • 1/4 teaspoon of salt
  • 1 medium-sized orange
  • 1 1/2 cups of low-fat milk
  • 4 tablespoons of honey, divided
  • 1/4 cup of nonfat Greek-style yogurt
  • 3/4 cup of fine cornmeal or instant polenta
  • 1/4 cup of mascarpone cheese (Italian cream cheese)
  • 1 teaspoon of nicely chopped fresh tarragon (optional)

How to prepare

Zest orange to obtain about 1 1/2 teaspoons of juice and put the zest aside. Now remove the remaining of the orange peel and white pith using a sharp knife. Cut segments from surrounding membranes and set them aside for garnish. Now combine milk, water and salt in a large-sized saucepan and bring it to boil. Slowly whisk in the polenta or cornmeal and again bring it to boil. Reduce the heat to a medium low temperature for maintaining an even bubble. Whisk the combination for about 1-5 minutes until the polentina gradually thickens. Remove the saucepan from heat, cover it and let it stand for about 5 minutes. Combine yogurt, mascarpone, one tablespoon of honey and half teaspoon of orange zest in a small-sized bowl. Now whisk the rest of the honey and zest in the polentina. Divide the mix among four bowls and put a little bit of mascarpone as topping. Use the orange segments and tarragon to garnish and serve immediately.

Gluten free Breakfast Recipe Chicken – Apple Sausage

You will need

  • 3/4 teaspoon of salt
  • 2 teaspoons of canola oil
  • 1 pound of ground chicken
  • 1 small onion, neatly diced
  • 1/2 teaspoon of fennel seed, chopped
  • 1/4 teaspoon of freshly grounded pepper
  • 1 tablespoon of packed light brown sugar
  • 1 tablespoon of evenly chopped fresh sage
  • 1 medium-sized sweet apple, like Honeycrisp or Gala, peeled and diced

How to prepare

Heat oil in one large-sized nonstick pan over medium heat and cook some onion on it for about 2 minutes until it begins to soften. Add some apples, cook them in the same way and transfer it to a bowl to get it cooled. Add chicken, sugar, salt, pepper, sage, and fennel to the bowl with onions and apples and mix gently to combine.
